Country Brunch Skillet

Eggs, bacon, and hashbrowns always make a great combination.  I love this skillet meal for any time of the day.  It’s an easy meal to make and serve.  Show off your cooking skills to your sweetheart with this one-dish meal!

  • 6 bacon strips
  • 6 C. frozen cubed hash brown potatoes
  • 3/4 C. chopped green pepper
  • 1/2 C. chopped onion
  • 1 t. salt
  • 1/4 t. pepper
  • 6 eggs
  • 1/2 C. shredded cheddar cheese


In a large skillet, cook bacon until crisp. Remove bacon, crumble and set aside. Drain, reserve 2 T. drippings. Add potatoes, green peppers, onion, salt and pepper to drippings; cook and stir for 2 minutes.

Add potatoes. Cook and cover; stirring occasionally, until potatoes are brown and tender, about 15 minutes. Make 6 wells in the potatoes; break 1 egg into each well. Cover and cook on low heat until eggs are set.

Sprinkle with cheese and bacon.

Yield: 6 servings
