Melt-in-your-Mouth Holiday Cinnamon Rolls

1/2 cup warm water

2 packages dry yeast

2 tablespoons sugar

1 small package vanilla pudding mix

1/2 cup butter, melted (no substitutions)

2 eggs

1 teaspoon salt

6 cups flour


1 cup butter, softened

3/4 cup brown sugar

3 teaspoons cinnamon

Preheat oven to 350 degrees. Mix water, yeast, and sugar together until dissolved. Set aside. In a large bowl prepare pudding mix according to package directions. Add butter, eggs and salt. Mix to blend well. Add yeast mixture and blend well. Gradually add flour. Transfer to a lightly floured surface and knead dough until smooth. Place in a greased bowl; cover and let rise in a warm area until doubled in size. Punch down dough and let rise again until doubled. Roll out dough on a floured surface. Take 1 cup soft butter and spread over surface. In a bowl mix 2 cups brown sugar and 4 teaspoons Cinnamon; sprinkle over the top. Roll up tightly. Cut with a sharp knife. Place cinnamon rolls on lightly greased cookie sheet 2 inches apart; lightly press each roll down. Cover and let rise to double again. Bake for 15 to 20 minutes. Remove when they start to turn golden. Do not over bake!  Frost warm rolls with cream cheese frosting (below). Makes about 20 large Cinnamon Rolls


8 ounces of cream cheese

1/2 cup powdered sugar

1 cup cool whip

Beat together cream cheese and sugar. Fold in cool whip and mix until smooth. Spread over warm cinnamon rolls.
