We have made these several times and the kids love them. I love that we’re reusing the pieces of the orange that would otherwise be thrown away.
3 cups sugar
¼ cup boiling water
1 cup evaporated milk
Few grains of salt
2 tsp. grated orange rind
1 cup nuts
Place 1 cup of the sugar in a heavy saucepan over medium heat and cook, stirring occasionally, until the sugar begins to melt. Then stir constantly until all the sugar is melted and deep golden brown in color. Add the boiling water to the caramelized sugar and cook to a smooth syrup, stirring constantly.
Add the remaining sugar, milk and salt and cook over medium heat to 238 degrees (mixture forms soft ball in cold water), stirring constantly. Add the orange rind. Cool and stir in nuts. Beat until crystalline. Drop from teaspoon onto waxed paper.
