Pineapple Squares

Pineapple, the welcoming fruit. This is one of my favorite desserts.  It is fairly easy to make and oh, so delicious!  It makes a great dessert for entertaining or potlucks.



2 1/4 c graham wafers, finely ground (graham crackers)

1/2 c melted butter

1/2 c butter

1 1/2 c icing sugar

2 unbeaten eggs

1/4 tsp. salt

1/2 pt cream, whipped

1 c drained crushed pineapple *


Mix together two cups ground graham wafers and 1/2-cup melted butter, press into 8×12-inch pan and bake at 325 F for approximately 15 minutes. Cool. Mix 1/2 cup butter, icing sugar, eggs and salt and beat till fluffy. Spread over baked wafers.

Combine whipped cream and pineapple and spread over last mixture. Spread 1/4-cup ground graham wafers or chopped nuts over this as topping. Leave in a cold part of the fridge 3- 4 hours. Will keep for three to four days.

Yield: 12 Servings

*I had some fresh pineapple that I needed to use so I used this instead and it worked just great!
